Weekend Roundup

It was a good weekend. We had a change of plans, and Youngest Son invited us for dinner on Father’s Day. I had already planned a pie, so I just took that over there. We swam in there pool, they BBQed awesome steaks and we had such a good time. Truly lovely!

I have to laugh, as soon as I walk in the house, their two dogs, Roxy and Phoebe, herd me to the fridge to get their baby carrot treats. It makes me laugh. Both my grandson and grand dogs know I’m a pushover :-) Daughter-in-law made better cilantro-lime rice than I do. I’m impressed! I’m a middle of the road average cook, and really appreciate those who do it better (even if they don’t believe me, LOL). We also had a nice bottle of wine and just an overall lovely time.

Now for the baking section of this blog. I hadn’t baked in a while and got a little revved up when I got stared :-) I tried this Key Lime Recipe and it turned out as good as I hoped!

I will definitely make that pie again. But OMG it took a truck load of key limes to get the 2/3s a cup of lime juice I needed. I used an entire bag of key limes plus three regular limes. That’s a log of juicing! Still–it was worth it. And I definitely recommend making the crust from this Biscoff cookies rather than graham crackers too. Although I used canned whipped cream because it’s easier to transport than home made whipped cream.

Now…I had one issue. The son that invited us avoids lactose (milk products). I had already promised Wizard the Key Lime Pie, so I made him the chocolate chip cookies he likes.

And then since I had some leftover Biscoff cookies and and non dairy chocolate, I experimented with making some ganache, replacing the heavy cream with the cream in canned coconut milk. It worked! I was pretty excited, so I frosted one side of a Biscoff cookie with the ganache then put on another cookie, and dipped the sandwich cookie in more melted chocolate.

Long story short, Youngest got two kinds of cookies–one made up as I was in a baking frenzy–to make up for him not being able to eat the pie. He seemed happy.

Today I’m back at the computer fighting to write Primal Magic. Eli is part griffin, which makes him part lion, and so full of pride and stubbornness that he’s running headlong into disaster. But will he listen to me?????

    Ours was lazy. LG is dealing with some health things so I keep insisting he take it easy. I don’t think either of us did much Saturday. I caught up on DVR’d shows and napped. LG caught some war movies he’d DVR’d and napped.

    The James Gang hit a favorite pizza place for dinner last night and all the guys got their FD cards. Jake went and only a few people noticed he was there until we left.

    Mostly, it was a boring weekend but we all need those occasionally. Weather change today–it’s cooling off into the 60s with a chance of rain. I feel for you guys still out west under the heat dome!

    Stormy is here for lunch and afternoons this week. I hope to maybe force out some words in the mornings. I’d almost trade for your reckless stubborn lion griffin. All my guys are on vacation and not taking my calls. ;)

    Sounds like you had an awesome weekend! Yay! Happy Father’s Day to Wizard.

    We did yardwork on Friday and Saturday. Yesterday was spent mostly vegging out. I made a chocolate oil cake… ummm, for Hubs… yeah, that’s the ticket. And beef stroganoff in the crock pot for dinner. I also wrote stuff and had copious ideas for more stuff which I will write throughout the week. All in all a good weekend.

    Sounds like your change of plans were still quite nice. I love that the “grand pups” are aware that Grandma Jenn is a softy ;).
    Your pie looks great. I buy Key Lime juice (can’t remember who bottles it) that is 100% key lime and great quality. I use half fresh and half bottled when I make my key lime pie. It’s so much easier. My arm is killing me from juicing the limes.
    How nice of you to make the two types of cookies too. You’re a good mom.
    I betting Eli tried to give you some sass and you had to put him in his place.

    Our dinner Saturday night was very nice. I think all had a good time. Middle forgot the gift he had for hubs and had to come by yesterday. He insisted he bring it over. Turns out it’s some really cool plant from Africa. I asked if it was toxic and his face fell. Hubs was able to find a place WAY up high where Spunk won’t get it and all was good.
    Later we went to Harrison’s and for the very first time I was the favored grandparent. No one has ever been ahead of hubs before so it was kind of funny. We all had a great time playing and eating. Eldest ordered a brisket from this place in Texas where a woman who is 98 still works three days a week preping and smoking the meat. It was amazing!

    Now for the funny – Saturday morning we got a video text from eldest. It was of Harrison and his three foot Stegosaurus. He had his milk glass with a straw under the creature. Eldest asked him what he was doing and he said he was milking it. When asked what he was going to do with the milk, he said he was going to add chocolate and drink it. Man did I laugh.

    I hope Wizard had a great Father’s Day.

    Silver, I hope LG is okay. And both of you probably needed some R&R this weekend.

    Sounds like you guys had a good, causal FD meal!

    Jake is such a good dog :-)

    Viki, I’ve used a good quality lime juice too. It works. But I really wanted to make this version of the pie, it looked so good. But dang, that juicing was brutal.

    I finally did get the best of Eli but it took me all day and honestly, Savi did it for me :-)

    I’m glad dinner turned out nice. Middle is so caring that he made the special trip to give Hubs his gift. Really glad you found a “safe” place for the plant so Spunk won’t get sick.

    I LOVE THAT YOU GOT TO BE THE FAVORITE GRANDPARENT!! Isn’t that the best feeling????

    Harrison’s milking the Stegosaurus is too cute! He’s pretty quick on his feet coming with putting chocolate in there and drinking it!
